- 2 English muffins, split, toasted (to serve)
- 120grams low fat ricotta (to serve)
- 1 large grapefruit, grated rind
- 4 eggs, whisked
- 3/4 cup caster sugar

Method
Step 1 of 4
Finely grate rind from grapefruit and then juice; you will need 1 cup of juice. Place rind, juice, sugar and butter into a heatproof bowl. Sit bowl over a saucepan of simmering water, making sure the bottom of the bowl does not touch the water.
Step 2 of 4
Stir mixture until butter has melted and sugar has dissolved. Add eggs. Whisk over medium heat until mixture thickens and coats the back of a metal spoon (similar to custard).

Pour into a clean, dry jar and store in the refrigerator.

Spread toasted muffins with ricotta and top with grapefruit butter.
