Method
Step 1 of 4
Combine flour and sugar in a large bowl. Whisk buttermilk and egg together in a jug. Add to flour mixture and whisk until smooth.
Step 2 of 4
Spray a non-stick frying pan with oil. Place over medium heat. Ladle 1/3 cup of the mixture into pan and spread to an even thickness. Cook for 1-2 minutes or until bubbles start to appear on surface. Carefully turn pancake and cook for 1 minute or until pancake is golden. Transfer to a plate and keep warm. Repeat to make a total of 8 pancakes, spraying pan with a little oil before each batch.
Step 3 of 4
Meanwhile, use a small heart-shaped cutter to cut hearts from apple slices. Heat butter, honey and orange juice in a medium frying pan over medium heat. Add apple hearts and cook, turning, for 5-6 minutes or until apples are tender.
Step 4 of 4
Serve pancakes with the apples and yoghurt. Drizzle with any honey syrup from the pan.
