Raspberry Coulis
- 125grams raspberries
- 1tablespoons caster sugar
- 2/3 cup milk
- 275grams banana bread (cut into 4 thick slices)
- unsalted butter (for greasing)
- 1teaspoons vanilla extract
- 2 free range eggs
- 2tablespoons caster sugar

Step 1 of 3
To make the raspberry coulis, place raspberries and sugar in a small saucepan over medium-low heat and cook, breaking up fruit with a wooden spoon, until mixture reaches boiling point. Remove pan from heat and set aside.

In a medium bowl, whisk together eggs, milk, vanilla and sugar. Lightly grease a frying pan with butter and place over medium-low heat. Dip a slice of banana bread into egg mixture to coat both sides, then cook in pan for 2 minutes or until underside is golden. Flip and cook for a further 2 minutes or until underside is golden. Transfer to a plate and cover to keep warm. Repeat with remaining banana bread and egg mixture.
Step 3 of 3
Using a 3cm heart-shaped cookie cutter (or small sharp knife), cut out and remove a heart shape from the centre of French toast. Place toast onto serving plates, then fill cutouts with raspberry coulis and serve.
