- 1/2 cup organic quinoa flakes
- 1 1/2 cup unsweetened almond and coconut milk
- 1 orange zested and juiced
- 150grams red grapes (halved if large)
- 1/2teaspoons mixed spice
- 2teaspoons pure honey
- 2tablespoons flaked natural almonds (toasted)
Description
Up your breakfast game with this porridge with roasted grapes recipe. Using quinoa flakes paired with mixed spice, honey, orange and juicy grapes makes this a healthier yet unique take on traditional oats.
Method
Step 1 of 4
Preheat oven to 220°C. Toss grapes and orange juice in a bowl. Place on baking paper-lined baking tray and bake for 20-25 minutes or until grapes start to split. Remove from oven, loosely cover with foil and set aside.
Step 2 of 4
Meanwhile, place quinoa flakes in a medium frying pan over medium heat and cook for 4-5 minutes, stirring often, or until lightly toasted.
Step 3 of 4
Add milk, 1 cup water, mixed spice, zest and honey. Cook, stirring regularly, for 5-6 minutes or until thick and creamy.
Step 4 of 4
Divide among serving bowls and top with extra honey, almonds, roasted grapes and juice, plus extra milk, if using.
