  • 1 cup fresh breadcrumbs
  • 1/2 cup milk
  • 1kilograms beef mince
  • 2 free range egg, lightly beaten
  • 80grams parmesan, finely grated
  • 1/2 bunch continental parsley, leaves picked, finely chopped
  • 4 cloves garlic, crushed
  • 1/4 cup extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1kilograms tomato pasta sauce
  • 1/4 bunch basil, leaves picked, finely chopped

Description

A batch of tasty beef meatballs in a rich tomato sauce goes a long way. Pair it with pasta or use it to make pizzas or subs.

Tip:
Cool meatballs, then transfer to an airtight container and store, covered and labelled, in the fridge for up to 3 days or freezer for up to 1 month. To use, thaw frozen meatballs in the fridge overnight.

Method

Step 1 of 4

Place breadcrumbs in a small bowl and pour over milk. Set aside.

Step 2 of 4

Combine mince, egg, parmesan, parsley and half of the garlic in a large bowl. Season. Add breadcrumb mixture, then mix well to combine. Roll tablespoonfuls of mixture into balls to make a total of 36 meatballs. Place on a large plate.

Step 3 of 4

Heat half of the oil in a large frying pan over medium-high heat. Cook meatballs, in 2 batches, turning, for 5 minutes or until browned.

Step 4 of 4

Heat remaining oil in same cleaned pan over medium-high heat. Cook onion and remaining garlic for 3 minutes, stirring, or until softened. Add pasta sauce and ½ cup cold water to pan and stir to combine. Return meatballs to pan. Reduce heat to medium-low and simmer, covered, for 10 minutes, stirring occasionally, or until meatballs are cooked through. Add basil and season, then stir to combine. Serve.
