- 1teaspoons dry yeast, fast action
- 1teaspoons caster sugar
- 2 1/2tablespoons olive oil
- 1 large egg, beaten
- 1teaspoons sea salt
- 4 spring onions, finely sliced
- 250grams beef mince
- 2 cloves garlic, peeled and minced
- 2teaspoons cumin
- 1teaspoons sumac, plus extra for sprinkling
- 75grams feta, crumbled

Description
Spiced beef and spring onions make a savoury and moreish filling for homemade Turkish pides.
Method
Step 1 of 5
Tip the flour, sugar, yeast and salt into a large bowl and stir to combine. Add 80ml of warm water and 2 tablespoons of oil and mix to combine. Tip on to a lightly floured work surface and knead for 5 minutes until smooth and springy.

Place in an oiled bowl and cover with a damp towel. Set aside to rise in a warm place for 1 hour.

Add the remaining oil to a large pan on medium heat and cook the beef mince and spring onions for 3-4 minutes to brown, stir in the garlic and spices and cook for 2 minutes.

Pre-heat the oven to 180°C. Tip the dough on to a floured work surface and cut into 4 pieces. Roll each piece into an oval shape.

Place the dough ovals on a lined baking tray and spoon the beef mix onto each, sprinkling a layer of crumbled feta on top. Leave a border around the edges and roll up to form a crust. Brush the edges with beaten egg and bake for 10-15 minutes until golden and crisp.
