  • 4tablespoons butter
  • 4 onions, peeled and diced, divided
  • 4 cloves garlic, peeled and sliced, divided
  • 1/3 cup red wine
  • 800grams chopped tomatoes
  • 400grams beef mince, lean
  • 2teaspoons thyme, fresh, leaves picked
  • 250grams basmati rice, ready cooked
  • 1/3 cup chicken stock, hot
  • 8 large cabbage leaves

Description

Stuffed cabbage rolls are a popular eastern European dish, filled with a meaty rice mix.

Method

Step 1 of 4

Heat a tablespoon of butter in a large pan medium heat and cook half of the onions for 5 minutes. Add half of the garlic and cook for 2 minutes. Pour over the wine, simmer for 1 minute, add the chopped tomatoes, bring to the boil and reduce the heat. Simmer for 15 minutes until reduced.

Heat the rest of the butter in another pan and cook the remaining onions for 5 minutes, add the mince, thyme and garlic and cook for 5 minutes until browned. Stir in the rice and stock and cook for 3-4 minutes.

Step 3 of 4

Pre-heat the oven to 180°C/160°C fan-forced. Place the cabbage leaves in a steamer and cook for 3-4 minutes until pliable. Cut the thick stem out of each.

Step 4 of 4

Spoon the beef and rice filling into each cabbage leaf and roll up tightly. Place each roll in a baking dish and pour over the tomato sauce. Cover with foil and bake for 10 minutes.
