- 500grams beef chuck steak, cut into 3cm pieces
- 1 brown onion, chopped
- 2 cloves garlic, crushed
- 100grams mushrooms, sliced
- 1kilograms red potatoes, peeled, quartered
- 2tablespoons tomato paste
- 1L Woolworths beef stock
- 1 small red capsicum, deseeded, roughly chopped
- 100grams green beans, trimmed

Description
A wholesome, rich beef casserole with a hint of sweetness. This comforting casserole recipe with capsicum, beans and potato will make the whole family happy.
Method
Step 1 of 3
Heat half the oil in a large saucepan over medium-high heat. Cook beef, turning, for 5 minutes or until browned all over. Transfer to a bowl.
Step 2 of 3
Heat remaining oil in same pan over medium-high heat. Cook onion, garlic and mushrooms, stirring, for 5 minutes or until softened. Return beef to pan with potato, paste, stock and capsicum, then bring to a boil.
Step 3 of 3
Reduce heat to medium-low and simmer, covered, for 1 hour or until beef is tender, adding beans during the last 10 minutes of cooking time. Season and serve.
