  • 2 cloves garlic, peeled
  • 1tablespoons plain flour
  • 2 carrots, peeled and chopped
  • 2 stalk celery, chopped
  • 1 large onion, chopped
  • 5milliliter worcestershire sauce (good splash)
  • 1/4 cup tomato puree
  • 3 cup beef stock
  • 1 pinch pepper (for seasoning)
  • 1teaspoons dried thyme
  • 2tablespoons oil
  • 1kilograms boneless blade beef
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 4

Preheat oven to 160°C.

Step 2 of 4

Heat half the oil in a large heatproof casserole pan. Add the meat in batches and brown all over. Remove to a bowl. Add the rest of the oil and cook the onion, carrot, celery and garlic for 5 minutes. Sprinkle over the flour and mix in well.

Step 3 of 4

Return the meat to the pan with thyme, stock, purée and Worcestershire sauce. Season with salt and pepper and mix well.

Step 4 of 4

Cover, place in oven and cook for 1 hour and 30 minutes until tender, stirring occasionally.
