  • 1/4 cup plain flour
  • 200grams green beans, trimmed, cut into 3rds
  • 1 large leek, trimmed, washed, sliced
  • 250grams mushrooms, thickly sliced
  • 1 lemon, juiced
  • 1 1/2 cup chicken stock
  • 1tablespoons olive oil
  • 8 chicken drumsticks
  • 3 cloves garlic, finely chopped

Method

Step 1 of 4

Preheat oven to 200°C.

Step 2 of 4

Heat oil in a large ovenproof casserole dish over medium heat. Lightly coat chicken with flour. Cook chicken in two batches for 8 minutes or until browned on all sides. Transfer to a large plate.

Step 3 of 4

Add leek, mushrooms and garlic to casserole and cook, stirring often for 5 minutes or until soft. Pour stock and lemon juice and bring to the boil. Return drumsticks. Cover and place in oven. Cook for 1 hour.

Step 4 of 4

Remove lid from casserole and stir through beans. Cover and stand for 5 minutes or until beans are tender. Serve.
