- 5 medium ripe bananas, mashed
- 113grams unsalted butter, melted
- 200grams brown sugar
- 2 large eggs
- 3/4teaspoons bicarbonate soda
- 225grams whole wheat flour
- 60grams dark chocolate chips
- 12 scoops butter pecan ice cream
Description
A warm slice of freshly made whole wheat banana bread topped with a giant scoop of butter pecan ice cream, a match made in dessert heaven.
Method
Step 1 of 5
Preheat the oven to 180°C, line a loaf pan with parchment paper.
Step 2 of 5
Add the mashed bananas, melted butter, brown sugar and eggs into a bowl, use a hand blender to combine all the ingredients until smooth. Alternatively the ingredients can be added to a blender or food processor if you are not equipped with a hand blender.

In a separate bowl mix the flour and baking soda together. Fold the flour mixture into the banana mixture until fully combined before mixing in the chocolate chips. Pour the batter into the lined loaf pan evening out the top using a spatula.

Bake for 50-60 minutes until a toothpick comes out clean when inserted to the center of the loaf. Remove from the oven letting the loaf cool in the pan for 10 minutes before removing the loaf placing it onto a cool rack for 10 minutes before slicing.

Place the warm slices onto plates topping them with butter pecan ice cream, serve immediately.
