Tipsy Blueberry & Mascarpone Pots

- 200grams blueberries
- 2tablespoons vodka
- 30grams reduced-fat mascarpone cheese
- 2/3 cup low-fat natural yoghurt
- 2tablespoons granulated sweetener
- 1 lime, grated rind and juice
Method
Step 1 of 3
Combine 150 g of the blueberries with the alcohol in a bowl and leave to soak for at least 1 hour. Then mash the blueberries.
Step 2 of 3
Beat together the mascarpone and yogurt in a separate bowl until smooth, then mix in the sweetener and the lime rind and juice.
Step 3 of 3
Layer alternate spoonfuls of mashed blueberries and mascarpone in 4 glasses. Top with the whole blueberries and chill until ready to serve.
