  • 4 rashers Woolworths middle bacon, rind removed

  • 2 large red-skinned potatoes, coarsely chopped
  • 1 bunch Broccolini®, halved
  • 1/4 cup Woolworths honey
  • 1 long red chilli, sliced
  • 1/3 punnet thyme, sprigs picked

Description

A sweet and savoury explosion of flavour, this simple bacon-wrapped honey chilli chicken dish will transport tastebuds to culinary heaven.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Wrap chicken in bacon. Heat oil in a large oven-proof frying pan over medium-high heat. Add potato and cook, stirring occasionally, for 5 minutes or until golden-brown. Transfer to a plate.

Step 2 of 3

Add chicken to pan and cook for 2 minutes each side or until browned. Return potato to pan. Roast for 15 minutes or until chicken is almost cooked and potatoes are golden-brown.

Step 3 of 3

Add broccolini to pan. Drizzle with honey. Roast for a further 5 minutes or until broccolini is tender and chicken is cooked. Serve sprinkled with chilli and thyme.
