- 4 rashers Woolworths middle bacon, rind removed, finely chopped
- 1 small brown onion, finely chopped
- 2 cloves garlic, crushed
- 1/2 cup firmly packed brown sugar
- 1/3 cup balsamic vinegar
Description
A sweet and savoury spread that combines the rich flavour of bacon with the caramelised goodness of onions and brown sugar. This bacon jam will elevate everything from burgers to bruschetta.
Method
Step 1 of 2
Heat a large non-stick frying pan over medium-high heat. Add bacon and cook, stirring occasionally, for 3-4 minutes or until golden-brown. Transfer bacon to a plate.
Step 2 of 2
Add onion and garlic to pan and cook, stirring, for 2-3 minutes or until the onion softens. Return bacon to pan. Add sugar and cook, stirring, for 1-2 minutes or until it dissolves. Stir in balsamic vinegar and cup water. Bring to the boil. Reduce heat. Simmer, stirring occasionally, for 5 minutes or until reduced slightly. Remove from heat. Cool completely.
