  • 1 punnet strawberries, hulled
  • 1 seedless mandarin, segmented
  • 1 bunch seedless red grapes
  • 1 cup caster sugar

Description

Transform fresh honeydew melon, strawberries and mandarin into vibrant, toffee-coated fruit skewers with this speedy, budget-friendly recipe.

Serving tip:

The high moisture content of the fruit means that the skewers are best served within 1 hour of being made. Replace the honeydew with rockmelon if needed.

Method

Step 1 of 3

Line a baking tray with baking paper. Use a melon baller to make 10 melon balls. Thread melon, strawberries, mandarin and grapes among 8 x 25cm bamboo skewers, keeping individual fruit to individual skewers. Place skewers in a single layer on tray.

Step 2 of 3

Place sugar and 1/2 cup water in a medium saucepan. Stir over medium heat until sugar dissolves. Increase heat to high. Cook, brushing down the sides of the pan to dissolve any sugar crystals that form, for 5 minutes or until toffee is golden. Remove from the heat.

Step 3 of 3

Holding 1 skewer at a time over pan, carefully use a dessertspoon to spoon some of the toffee over the skewer. Plunge skewer into a bowl of iced water for 30 seconds or until toffee hardens. Transfer to tray. Repeat with the remaining toffee and skewers. Serve.
