Instruction tip
Prep tip:This recipe can be made up to 2 days in advance. Reheat in a saucepan, stirring with a wooden spoon, over gentle heat until heated through.
Method
Step 1 of 4
Cook potato in a large saucepan of boiling water for 12-15 minutes or until tender. Drain. Return to pan. Add butter. Mash over low heat until smooth. Cover to keep warm.
Step 2 of 4
Meanwhile, spray sausages with oil. Heat a large, deep non-stick frying pan over medium-high heat. Cook sausages, in two batches, turning occasionally, for 3 minutes or until browned all over. Transfer to a plate.
Step 3 of 4
Place gravy powder in a large heatproof jug. Stir in 1 1/2 cups boiling water until smooth and beginning to thicken. Pour gravy into same pan. Place over medium heat. Bring to the boil, stirring. Add tomato sauce, garlic and Worcestershire sauce. Gently boil for 2 minutes or until gravy turns a rich brown colour and reduces slightly.
Step 4 of 4
Return sausages to pan and simmer for 3 minutes or until sausages are cooked. Add peas and cook for 1 minute or until peas are bright green. Spoon mashed potato onto plates. Top with sausages and gravy. Season with freshly cracked black pepper. Serve topped with spinach.
