Method

Step 1 of 4

Microwave rice as per packet directions.

Step 2 of 4

Meanwhile, heat oil in a large non-stick fry pan over high heat. Add lamb and stir fry for 2-3 minutes. Remove to a bowl.

Step 3 of 4

Add vegetables to the hot pan and cook for 2 minutes or until bright green and tender. Return lamb to the pan with 100ml water and bring to boil.

Step 4 of 4

Divide rice among shallow bowls, top with lamb and vegetables and serve.
