  • 300grams green prawns, peeled, deveined
  • 2 squid tubes, cleaned
  • 1 lemon, zested (juiced)
  • 2tablespoons olive oil (plus extra to serve)
  • 130grams berry truss tomatoes, quartered

Method

Step 1 of 6

Heat 1 tbs oil in a frying pan over medium heat. Add breadcrumbs and toast, stirring occasionally, until golden. Stir in garlic and cook for 1 minute or until fragrant. Transfer to a bowl and stir in zest.

Cut along both sides of the squid. Pat dry with paper towel. Slice into very thin strips. Chop prawns. Place squid and prawn in a second bowl with remaining oil and season with pepper. Set aside.

Cook pasta following packet directions until tender. Drain and keep warm.

Step 4 of 6

Meanwhile, heat frying pan over high heat. Add squid and prawn and cook, tossing often, for 2-3 minutes or until they change colour. Add tomato and warm through for 1 minute.

Step 5 of 6

Add pasta, rocket and lemon juice to pan. Stir through to combine.

Step 6 of 6

Divide between serving bowls, drizzle with extra oil and top with crumb mixture. Serve.
