  • 2/3 cup olive oil
  • 2 egg yolks

Method

Step 1 of 3

Place egg yolks and garlic into a small food processor. Process for 30 seconds or until combined. With processor motor running, add 1 teaspoon oil. Continue to add oil, 1 teaspoon at a time, until mixture forms a thick creamy mayonnaise. Add remaining oil and process until smooth and thick.

Step 2 of 3

Add lemon juice and process until combined. Season with salt and white pepper. Add a little warm water, a teaspoon at a time, for a thinner mayonnaise.

Step 3 of 3

Cook prawns as per packet instructions. Drain and serve with a dollop of garlic mayonnaise.
