- 70grams smoked salmon, cut into thin strips
- 1/2 small avocado, flesh roughly mashed
- 1/4 Lebanese cucumber, very finely chopped
- 2tablespoons pickled ginger, finely chopped
- 2 cup sushi rice, rinsed, drained
- 1/4 cup sushi seasoning
- 2tablespoons whole egg mayonnaise
- 1/2 cup sesame seeds, toasted
- 1/3 cup soy sauce (to serve)
- 70grams smoked salmon, cut into thin strips
- 3teaspoons wasabi

Method
Step 1 of 3
Cook rice following pack instructions. Remove from heat and set aside, covered, for 5 minutes. Add seasoning. Using a fork, fluff the rice. Line a baking tray with baking paper. Spread out rice. Chill for 1 hour.

Mix avocado with mayonnaise in a bowl.
Step 3 of 3
Line a tray with baking paper. With damp hands, roll the rice into 18 equal balls. Place on tray. Using the end of a chopstick, make holes in the middle of balls. Using your fingers, insert a little of the avocado mayo, cucumber, ginger and salmon into each ball. Reshape rice to enclose. Coat with sesame seeds. Cover with plastic wrap and chill for 1 hour to firm. Serve with soy sauce and wasabi.
