Method

Step 1 of 8

Preheat oven to 180°C (fan forced).

Step 2 of 8

Remove roast from packaging; reserving meat juices for gravy.

Step 3 of 8

Place the roast in an ovenproof dish and roast for 30 minutes.

Step 4 of 8

Meanwhile, make the gravy by adding water to the reserved meat juices to make a total of 500ml. Pour liquid into a saucepan and bring to a gentle simmer. Turn off heat and set aside.

Step 5 of 8

Melt 50g of butter in a second saucepan over low heat. Add 50g of flour to the butter and stir to combine. Continue stirring until the mixture turns a rich brown.

Step 6 of 8

Carefully pour the hot meat liquid into the butter and flour mixture while whisking; bring to the boil.

Step 7 of 8

Continue to simmer on low heat until the gravy is smooth and glossy. Extra water can be added to achieve the desired consistency.

Step 8 of 8

Serve roast with gravy and roast potatoes.
