- 1 green apple, cut into matchsticks
- 300grams green beans
- 2 cup red cabbage, finely shredded
- 1 carrot, cut into fine sticks
- 1/2 cup flat-leaf parsley, chopped
- 1/3 cup honey mustard dressing
- 1tablespoons honey
- 1/3 cup rolled oats
- 2teaspoons sesame seeds
- 1/4teaspoons cumin seeds
- 1tablespoons olive oil
- 1 egg white
- 4 pork loin cutlets
- 1/2 cup hazelnuts, toasted, chopped
Method
Step 1 of 5
Preheat oven to 200°C. Line a baking tray with baking paper.

Whisk egg white, cumin and honey until frothy. Add oats, sesame seeds and hazelnut and stir to coat. Spoon onto prepared tray. Bake, stirring halfway through cooking time, for 12-15 minutes or until granola is toasted. Set aside to cool.

Heat oil in a large frying pan over medium-high heat. Cook pork for 4 minutes each side or until just cooked through.

Meanwhile, combine apple, cabbage, carrot, parsley and dressing in a medium bowl. Season to taste.

Steam or microwave beans until tender. Drain. Serve pork with apple slaw, beans and a sprinkle of granola.
