- 3 cloves garlic
- 3teaspoons Chinese 5 spice
- 1/2 cup cornflour
- 1teaspoons chilli powder
- 600grams banana prawns
- 1 lime, to serve
- 1 cup whole egg mayonnaise
- 1/2 cup rice flour
- 2 egg whites
- 3teaspoons sea salt flakes
- 1L vegetable oil, to deep fry

Method
Step 1 of 5
Remove heads from prawns, leaving the shell and legs on.
Step 2 of 5
Combine rice flour, cornflour, sea salt, Chinese 5 Spice and chilli powder in a bowl. In a separate bowl, lightly whisk egg whites together.
Step 3 of 5
Combine mayonnaise and crushed garlic in a small serving bowl. Chill.
Step 4 of 5
Heat peanut or vegetable oil in a wok. Dip prawns into egg white then toss in flour mixture to coat. Fry prawns in batches for about 2 minutes, until golden.
Step 5 of 5
Remove using a slotted spoon and drain on paper towel. Serve hot with aioli and lime wedges.
