- 140grams butter, chopped
- 2 brown onions, finely chopped
- 6 middle bacon rashers, fat trimmed, finely chopped
- 4 cups fresh white breadcrumbs
- 4.50kilograms Woolworths fresh whole turkey
- 1/3 cup maple syrup
- 500grams green beans, trimmed
- 330grams gravy, warmed

Method
Step 1 of 4
Preheat oven to 240°C /220°C fan-forced. Line a large roasting pan with baking paper.
Step 2 of 4
Pick leaves from 1 bunch of rosemary and finely chop. Melt 100g butter in a large frying pan over medium-high heat. Cook onion, bacon and chopped rosemary, stirring, for 6 minutes or until onion has softened. Place in a large bowl. Add breadcrumbs and season. Stir until combined.

Place remaining butter in a small saucepan over low heat for 1 minute or until melted. Remove pan from heat. Pat turkey dry, inside and out, with paper towels. Loosely fill front and back cavities with bacon mixture (reserve any remaining stuffing). Secure front cavity with toothpicks and legs with unwaxed kitchen string. Tuck wings under turkey, then place in pan and brush with melted butter. Cover with baking paper, then foil. Place turkey in oven and reduce oven immediately to 200°C/180°C fan-forced. Roast for 2 hours or until almost cooked through and starting to brown. Remove foil and baking paper. Brush with maple syrup and roast for 50 minutes, basting with pan juices every 15 minutes, or until turkey is golden and juices run clear when thigh is pierced with a skewer. Scatter reserved stuffing on a greased baking tray and roast along with turkey for the last 15 minutes of cooking or until golden. Cover turkey loosely with foil and rest for 15 minutes.

Meanwhile, cook beans in a large saucepan of boiling water for 4 minutes or until just tender, then drain. Transfer to a bowl and season with pepper. Place reserved stuffing on a large plate. Arrange turkey with remaining rosemary bunch on top. Serve turkey with beans and gravy.
