  • 2 limes
  • 40grams unsalted butter, softened
  • 2 small thawed cooked rock lobsters
  • 1tablespoons extra virgin olive oil
  • 1 baguette, thinly sliced on the diagonal, toasted

Description

Ready in just three steps, serve up tasty grilled lobster cooked in lime butter with a side of mango salsa at your next barbecue.

Method

Step 1 of 3

Finely chop half of the coriander. Place mango, chopped coriander and shallot in a small bowl. Season and stir to combine. Zest 1 lime, then cut both limes into wedges. Combine butter and zest in a small bowl.

Step 2 of 3

Preheat barbecue plate on high. Place a tea towel over back of large, sharp knife, then place blade along middle of lobster and press down to cut in half lengthways. Brush cut sides with oil. Cook, cut-side down, for 2 minutes or until lobster is just heated through. Turn over and spread cut sides with lime butter. Cook for 2 minutes or until butter has melted.

Step 3 of 3

Transfer lobster to a large platter. Serve lobster with mango salsa, lime wedges, remaining coriander and bread.
