  • 200grams dried soba noodles
  • 1tablespoons vegetable oil
  • 2 tuna steaks (about 125g each)
  • 1/4 cucumber, sliced
  • 2 spring onions, sliced
  • 2tablespoons soy sauce
  • 2tablespoons mirin
  • 1/2 lime, juice only
  • 2teaspoons caster sugar
  • 1 pinch salt
  • 1 pinch pepper
  • 1teaspoons sesame seeds (to serve)

Description

This tuna soba noodles recipe combines lightly seared fish tossed in Japanese Ponzu dressing. On the table in a speedy five minutes this is a quick and easy go-to lunch or dinner.

Method

Step 1 of 3

Cook the noodles according to the pack instructions. Meanwhile, heat a griddle pan until smoking hot. Rub the oil over the tuna steaks and season well. Cook in the pan for 1-2 minutes on each side, or until charred on the outside but still rare inside.

Drain the noodles, cool under cold running water and drain again, then divide between serving bowls.

Step 3 of 3

Cut the tuna into slices and toss together with the cucumber and spring onions. Mix together the soy sauce, mirin, lime juice and sugar until the sugar has dissolved. Pour over the noodles and sprinkle with sesame seeds to serve.
