  • 400grams tofu, chopped into cubes
  • 500grams wholegrain rice, ready cooked
  • 4 large spring onions, sliced, green tops reserved
  • 200grams broccoli, sliced
  • 2 large carrots, sliced
  • 3tablespoons cashew nuts
  • 3tablespoons coriander, fresh, chopped

Description

This hoisin tofu poke bowl is great for meal prep and can be enjoyed hot or cold.

Method

Step 1 of 4

Whisk soy sauce, hoisin sauce, half the oil and the garlic and ginger together in a medium bowl. Add the tofu cubes to the bowl and coat well.

Step 2 of 4

Heat the remaining oil in a large non-stick pan on medium high heat and add the tofu. Cook for 5 minutes, tossing occasionally, until browned on all sides. Remove from the pan and set aside.

Step 3 of 4

Add the broccoli, carrots, cashews and the white parts of the spring onion to the pan along with a tablespoon of water. Cook for 3-4 minutes until softened. Cook the rice according to pack instructions.

Step 4 of 4

Divide the rice between four bowls, add the vegetable mix and cashews, top with the tofu, spring onion tops and fresh coriander and serve.
