  • 1 spring onion, chopped white part
  • 1 clove garlic, crushed
  • 4 heads radicchio, trimmed at the base and quartered
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1tablespoons balsamic vinegar
  • 1-2teaspoons caster sugar

Method

Step 1 of 3

In a frying pan, heat the olive oil, add the spring onion and garlic, and cook over a medium heat, until softened and golden.

Step 2 of 3

Spread the radicchio in the pan. Cook for 3 minutes, then turn it over using tongs, and cook for a further 3 minutes. Season. Add about 3-4 tablespoons of cold water, cover, and simmer for 10 minutes.

Step 3 of 3

Remove the lid, increase the heat, then add the balsamic vinegar and sugar. Cook for 2-3 minutes, turn the radicchio over, and cook for a further 2 minutes. Serve hot.
