  • 1 cloves garlic, peeled and cut in half
  • 1teaspoons ground coriander
  • 1teaspoons ground cumin, peeled and minced
  • 1teaspoons garam masala, fresh, chopped
  • 1/4teaspoons turmeric, fresh, chopped
  • 2tablespoons olive oil
  • 1 large lemon, juice and zest
  • 1teaspoons honey
  • 1tablespoons coriander, fresh, chopped

Description

This curried whole roasted cauliflower makes an impressive centrepiece dish.
Instruction tip
Top with pomegranate seeds for a pop of colour and sweetness.

Method

Step 1 of 5

Pre-heat the oven to 200°C/180°C fan-forced. Trim the cauliflower leaves, slice off the base and rub the cauliflower all over with the cut garlic clove. Place on a foil lined baking sheet.

Step 2 of 5

Mix the spices and a tablespoon of olive oil in a small bowl and brush all over the cauliflower.

Step 3 of 5

Roast the cauliflower for 1 hour and 15 minutes, or until slightly charred on the outside and tender when pierced with a knife.

Step 4 of 5

Mix the lemon juice and zest with the honey and remaining oil and pour over the cauliflower once it is out of the oven.

Step 5 of 5

Scatter fresh coriander on top and serve, carving slices for each portion.
