- 1teaspoons sesame oil
- 4 spring onions, sliced, green tops reserved
- 2 cloves garlic, peeled and minced
- 1 red chilli, finely sliced
- 500grams pork mince
- 2 medium limes, juice and zest
- 1teaspoons lemongrass paste
- 1tablespoons fish sauce
- 2 heads baby gem lettuce
- 1 pack mint, fresh
Description
These fragrant lemongrass scented pork lettuce cups make a tasty starter or light lunch.
Method
Step 1 of 4
Heat the oil in a large pan on medium high heat and cook the spring onions, garlic and chilli for 2 minutes.
Step 2 of 4
Add the pork mince and cook for 10 minutes, until browned and cooked through.
Step 3 of 4
Stir in the lime juice and zest, lemongrass paste, fish sauce and half of the mint and cook 2 minutes.
Step 4 of 4
Separate the lettuce leaves by slicing off the root and arrange on a platter. Fill each lettuce cup with the pork mix, top with extra fresh mint, spring onion tops and chilli and serve.
