- 1 onion, roughly chopped
- 2 cloves garlic
- 1 fresh root ginger, 2.5 cm piece, sliced
- 1 red chilli, deseeded
- 2tablespoons dried prawn
- 3tablespoons peanut oil
- 500grams lean beef, cut into thin strips
- 1tablespoons tamarind paste
- 2tablespoons dark soy sauce
- 4tablespoons water
- 1teaspoons demerara sugar
- 1 small handful shredded mint leaves, plus extra whole ones to garnish
- 1tablespoons snipped chives, to garnish
Method
Step 1 of 3
Blend the onion, garlic, ginger, chilli and dried prawn in a food processor until it forms a smooth paste.
Step 2 of 3
Heat the oil in a wok over a medium heat and cook the paste, stirring constantly, for about 2 minutes, until the oil separates from the other ingredients.
Step 3 of 3
Add the beef and stir-fry until the meat becomes opaque, then add the tamarind paste, soy sauce and water. Simmer, uncovered, for 2-3 minutes, until most of the liquid has evaporated and the meat is tender. Stir in the sugar and shredded mint leaves, season to taste and garnish with chives and a few whole mint leaves. Serve with a vegetable dish and rice, if liked.
