  • 1kilograms Just Caught Peeled And Deveined Raw Prawns, thawed
  • 1/2 cup Thai-style dressing
  • 200grams dried flat rice noodles
  • 1 Lebanese cucumber, halved lengthways, thickly sliced
  • 200grams Sweet Solanato® tomatoes, halved
  • 1/2 bunch coriander, leaves picked
  • 1 long red chilli, thinly sliced into rounds
  • 1/3 cup fried shallots
  • 1 lime, cut into wedges

Description

It’s the combination of the zingy dressing, fresh coriander and delicious prawns that’ll make this dish a contender for a summer favourite.

Method

Step 1 of 4

Combine prawns and 1/4 cup dressing in a bowl. Set aside for 10 minutes to marinate.

Step 2 of 4

Meanwhile, cook noodles according to packet instructions.

Step 3 of 4

Preheat a greased barbecue plate on medium-high. Cook prawns for 2 minutes each side or until cooked through and golden.

Step 4 of 4

Combine noodles, cucumber, tomato, coriander and chilli in a large bowl. Transfer to a serving platter. Top with prawns. Sprinkle with shallots. Serve with lime and remaining dressing.
