  • 4 medium boneless skinless chicken breast
  • 2tablespoons taco seasoning
  • 375grams tomato salsa, your preference of mild, medium or hot
  • 2 cobs corn, kernels cut off the cob
  • 400grams black beans, drained rinsed
  • 2tablespoons red onion, minced
  • 75grams seedless watermelon, peeled, diced small
  • 1 small roma tomato, core and seeds removed, diced small
  • 1 medium lime
  • 1/2 small jalapeno, seeds and veins removed, diced small
  • 2tablespoons coriander, leaves chopped
  • 1 pinch salt
  • 1 pinch pepper

Description

Chicken breast simmered with taco seasoning, ready made salsa, beans and corn served with a tomato, jalapeno, watermelon salsa.

Method

Step 1 of 4

Heat a large skillet to medium-high heat on the stovetop adding in the olive oil to warm for 1 minute. Season the chicken breasts with taco seasoning before searing the chicken in the skillet on both sides to brown for 3 minutes.

Step 2 of 4

Pour in the salsa, corn and black beans, simmer for 15 minutes until the chicken is fully cooked.

Step 3 of 4

Mix the red onion, watermelon, tomatoes, lime juice, jalapeno and coriander together in bowl seasoning with salt and pepper.

Step 4 of 4

Plate the chicken along with the salsa, corn and black bean sauce. Spoon the salsa onto each plate of chicken before serving.
