- 2teaspoons vegetable oil
- 800grams boneless, skinless chicken thighs, diced medium
- 1 large onions, diced small
- 2 medium mixed capsicum, seeds and veins removed, diced small
- 1 medium mango, peeled, diced medium
- 900grams tikka masala simmering sauce, ready made
- 250grams green beans, stems removed, cut into 4
- 1/4 bunch coriander, chopped
Description
Sweet and spicy chicken curry stewed in a mango tikka masala sauce makes a delicious and warming midweek dinner.
Method
Step 1 of 3
Add the vegetable oil to a large pot, place onto medium heat on the stovetop for 1 minute. Add the chicken to brown on each side for 5 minutes. Remove the chicken thighs from the pan placing it onto a place or dish. Stir in the onions and capsicum cooking them for 3 minutes.
Step 2 of 3
Stir in the diced mangoes stewing for 2 minutes before pouring in the tikka masala sauce along with the seared turkey, simmer for 20 minutes until the turkey is fully cooked and tender. Add in the green beans to cook for and additional 2 minutes.
Step 3 of 3
Serve warm with fresh chopped coriander on top.
