- 800grams crushed tomatoes
- 1/4 bunch coriander, chopped
- 25milliliter lime juice

Description
An easy and flavourful Mexican style chipotle chicken stew, this recipe makes a big batch to freeze and enjoy on busy weekdays.
Method
Step 1 of 2
Heat the oil in a large pot set to medium heat for 1 minute, add the chicken to the pot to brown on each side for 5 minutes. Remove the chicken from the pot placing it onto a place or dish. Stir in the onions, sweating them for 3 minutes before adding the minced garlic in for 30 seconds.
Step 2 of 2
Mix in the chipotle paste, cooking for 2 minutes before pouring in the crushed tomatoes adding the chicken back to the pot. Simmer for 45 minutes until the chicken is fully cooked and tender. Stir in the chopped coriander and lime juice before serving warm over a bed of rice or with tortillas.
