  • 450grams chicken thighs, skin on, cut into quarters
  • 200grams button mushrooms, cleaned and sliced
  • 1 medium shallots, peeled and minced
  • 2 cloves garlic, peeled and minced
  • 75milliliter dry white wine
  • 1tablespoons tarragon, fresh, chopped
  • 2tablespoons Italian parsley, fresh, chopped
  • 125milliliter crushed tomatoes

Description

Otherwise known as hunter's chicken, this simple Italian chicken casserole is comforting and filling.

Method

Step 1 of 3

Preheat a large a pan with the olive oil on on medium-high heat for 1 minute. Add the chicken, browning on each side for 2 minutes.

Step 2 of 3

Remove the chicken onto a plate or tray and add the mushrooms, shallots and garlic to the pan, saute for 5 minutes until the liquid has evaporated from the mushrooms. Add in the wine, tarragon and parsley to the pan cook until reduced by 3/4's.

Step 3 of 3

Add the chicken back to the pan along with the crushed tomatoes and simmer for 15 minutes until the chicken is fully cooked. Portion onto plates and serve warm.
