  • 8 pieces pork sausage, cut in half
  • 1 medium yellow onion, diced medium
  • 2 cloves garlic, peeled and minced
  • 1tablespoons rosemary, fresh, chopped
  • 125milliliter dry red wine
  • 400grams crushed tomatoes
  • 400grams canned mixed beans, drained and rinsed
  • 1teaspoons sea salt
  • 1/2teaspoons black pepper, ground
  • 1teaspoons chili powder (optional)

Description

Sausage casserole is a rich and hearty dish perfect for chilly days and it takes no time at all to make.

Method

Step 1 of 3

Place a large skillet onto medium heat on the stovetop for 1 minute to heat up. Add the bacon to the skillet stirring to brown for 5 minutes. Add the sausage to the skillet searing on each side for 2 minutes. Stir in the onions, sautee for 3 minutes then add the garlic and rosemary, cook for 1 minute.

Deglaze the skillet with red wine and simmer for 2 minutes until the wine has reduced by half. Add the crushed tomatoes along with the mixed beans. Simmer the sausage casserole for 15 minutes, stirring very few minutes to ensure the bottom doesn't scorch.

Step 3 of 3

Season with salt and pepper, serve immediately. If you want to make it a little more spicy add in some chilli powder.
