- 2tablespoons olive oil
- 8 large pork sausages
- 170grams bacon lardons, smoked
- 700grams baby potatoes, diced
- 1/4 bunch thyme, about 3 sprigs
- 1 bay leaf
- 2 cups chicken stock, made with 1 stock cube
- 30grams butter
- 4 slices crusty bread
Description
Coddle is a classic, hearty Dublin stew made with sausages, bacon and potatoes. You can skip the browning stage to stick to the traditional method.
Method
Step 1 of 3
Heat the oil in a large, deep pan on medium heat and cook the sausages until lightly browned on all sides. Add the bacon lardons and cook for 2 minutes.
Step 2 of 3
Tip in the potatoes, thyme and bay leaf, pour over the stock, add butter and bring to the boil. Cover, reduce the heat and simmer for 30 minutes.
Step 3 of 3
Remove the thyme and bay leaf and serve with crusty bread on the side, if desired.
