  • 2 medium zucchini, sliced in half, lengthways
  • 3/4 cup passata
  • 2tablespoons canola oil
  • 200grams sausage meat
  • 1 small white onion, peeled and diced
  • 2 cloves garlic, peeled and diced
  • 80grams cheddar cheese, grated
  • 1tablespoons chives, diced

Description

These meaty and cheesy snacks are simple and easily made.

Method

Step 1 of 8

Pre-heat the oven to 180°C.

Step 2 of 8

Slice the zucchini in half lengthways and scoop out the flesh from the centre and set aside.

Step 3 of 8

In a baking dish, place the passata at the bottom.

Step 4 of 8

Heat up a non-stick pan with the oil and fry the sausage meat for 5 minutes while tossing.

Step 5 of 8

Add the onion, garlic and zucchini flesh to the pan with the sausage meat and cook while mixing for another 5 minutes.

Step 6 of 8

Take off the heat and transfer the mixture into each of the zucchini boats.

Step 7 of 8

Cover with the grated cheese and place in the baking tray on top of the passata and bake for 30 minutes.

Step 8 of 8

Remove from the oven and garnish with chives before serving.
