  • 1 carrot, grated
  • 1/2 onion, finely chopped
  • 1/4 cup flat-leaf parsley, chopped
  • 5milliliter virgin olive oil spray
  • 2tablespoons tomato paste
  • 1 bunch kale, stems and leaves separated and leaves chopped
  • 500grams beef mince
  • 1 egg yolk
  • 1/2 cup breadcrumbs

Method

Step 1 of 3

Place kale stems in a large bowl and cover with boiling water. Set aside for 5 minutes or until softened. Drain well and pat dry with paper towel. Finely chop.

Step 2 of 3

Meanwhile, combine mince, onion, carrot, parsley, tomato paste, egg yolk and breadcrumbs in a bowl. Season. Add kale stem and mix together well using your hands. Shape into 6 rissoles.

Step 3 of 3

Heat a chargrill or frying pan over medium heat and spray with oil. Cook rissoles for 5 minutes on each side or until golden and cooked through. Garnish with kale leaves.
