  • 20grams butter, melted and cooled
  • 125grams bacon, diced
  • frozen straight cut chips (to serve)
  • 1 brown onion, finely chopped
  • 5milliliter virgin olive oil spray
  • 1kilograms turkey mince
  • 50grams baby spinach, roughly chopped
  • 2 slice bread, diced
  • 1 egg, whisked
  • 1/4 cup dill sprigs, finely chopped
  • 1 pinch shredded BBQ roast chicken (to taste)
  • 250grams truss roma tomatoes

Method

Step 1 of 5

Preheat oven to 200°C. Grease a 20x8cm (6-cup capacity) loaf pan.

Heat a non-stick frying pan over medium heat. Add onion and bacon and cook for 3-4 minutes or until soft. Cool.

Combine turkey mince, spinach, dill, egg and cooled bacon mixture in a large bowl. Spoon mixture into prepared loaf pan. Combine diced bread and melted butter in a bowl. Spoon over meatloaf, pressing on lightly. Bake for 45 minutes or until loaf is cooked through.

Serve immediately with oven baked chips and roasted tomatoes.

To make chips and tomatoes, cook oven chips as per packet instructions. Line a baking tray with baking paper. Place tomatoes onto tray and spray with olive oil. Sprinkle with salt. Bake for 15-20 minutes or until tender.
