- 1 large onion, peeled, chopped into wedges
- 1tablespoons black peppercorns
- 1 bunch parsley, stalks included
- 2 bay leaves
- 700grams savoy cabbage, roughly chopped

Description
Corned beef and cabbage is a hearty and satisfying traditional Irish dish, perfect for the colder months.
Method
Step 1 of 2
Place the brisket, carrots, onion, peppercorns and parsley tied with the bay leaves in a large pot of water, bring to the boil, reduce the heat and simmer with the lid on for 2.5 hours, skimming off any scum from the surface.
Step 2 of 2
Add the cabbage to the pot and cook for 10-15 minutes more, until tender. Drain well, discard the herbs and serve the brisket sliced with the carrots, onion and cabbage.
