  • 700grams savoy cabbage, roughly chopped

Description

Bacon and cabbage is a staple Irish dish best served with parsley sauce and mashed potatoes.

Method

Step 1 of 3

Place the bacon, onion and 3/4 of the parsley tied with the bay leaves in a large pot of water, bring to the boil, reduce the heat and simmer for 45 minutes. Remove 2 ladles of stock and set aside in a pan.

Step 2 of 3

Add the cabbage to the pot and cook for 10-15 minutes more, until tender. Drain well and discard the herbs.

Step 3 of 3

Bring the pan with the stock to the boil with the cream, simmer until thickened, stir in the mustard and remaining fresh parsley and serve with slices of bacon and cabbage.
