  • 2teaspoons cornflour
  • 2 dried bay leaves
  • cabbage
  • 2 carrot
  • 1 stalk celery
  • 3 brown onion, peeled
  • 1kilograms corned beef
  • potato
  • 8 cloves
  • parsley sauce

Method

Step 1 of 4

Put corned beef into a large saucepan and cover with cold water. Push cloves into the onion. Roughly chop celery and carrot and add to pan with onion, bay leaves and peppercorns. Bring to the boil, then reduce heat and simmer for 2 hours.

Add potato pieces, carrot chunks and onions and when nearly tender, add the cabbage.

Step 3 of 4

For the parsley sauce, mix 2 teaspoons of cornflour with a little cold water until smooth. Strain about 1 cup of the stock into a small pan and bring to the boil. Stir in the cornflour paste and simmer until it thickens. You can add a bit of cream to make it creamier. Stir in the chopped parsley.

Step 4 of 4

Transfer corned beef to a chopping board and slice. Serve with vegetables and parsley sauce.
