- 1 fresh whole chicken
- 1 carrot, chopped
- 2 brown onions, peeled, cut into wedges
- 2 cinnamon stick

Description
Topped with juicy shredded chicken and slivered almonds, this Lebanese Mansaf rice dish will tantalise the senses with its irresistible aroma and layers of flavour.
Method
Step 1 of 4
Soak rice in a small saucepan for 15 minutes before cooking.
Step 2 of 4
Meanwhile, place chicken in a large pot with a tight-fitting lid and add 4 cups water to cover chicken. Add carrot, onion and cinnamon. Season well. Bring to a boil. Once chicken is boiled, remove from pot and sift the leftover stock into a separate bowl. De-skin and shred chicken, then place into a bowl for later.

Drain rice and place into a medium pan. Add spice mix and stock. Add 4 cups water to cover rice and cook on high for 5 minutes until water is boiling. Reduce heat to low and cook for 25 minutes until rice is fluffy. In a separate pan, melt ghee, then add slivered almonds and cook for 5 minutes until toasted and golden brown. Move slivered almonds to one side of the pan, then pour the ghee on top of the rice and stir through.
Step 4 of 4
Pour rice onto a platter to form a mountain shape. Add shredded chicken. Serve sprinkled with toasted slivered almonds.
