- 200grams celery, thinly sliced
- 75grams blanched almonds, roughly chopped
- 3tablespoons parsley, chopped
- 4tablespoons mayonnaise
- 400grams ready-cooked chicken breast, shredded
- 12 apricots, halved and stoned
- 1 pinch salt
- 1 pinch pepper
Method
Step 1 of 2
Place the celery, half the almonds, the parsley and mayonnaise in a large bowl, season to taste and toss to combine.
Step 2 of 2
Add the chicken and apricots, stir lightly and transfer to a serving plate. Garnish with the remaining almonds to serve.
