Kosher Chicken with Panzanella Stuffing

- 100grams breadcrumbs
- 1/4 cup olive oil, keep 1 tbs for the chicken
- 1 small red onion, peeled and diced
- 1/2 medium red capsicum, diced
- 50grams Kosher black olives, pitted and chopped
- 1 lemon, zested
- 10 leaves basil, chopped
- 2tablespoons parsley, chopped
- 4 kosher chicken breasts, butterfly cut
Description
An easy kosher dish to try at home with added crunch and packed full of fresh vegetables.
Method
Step 1 of 4
Pre-heat the oven to 180°C. Place the breadcrumbs in a bowl with the olive oil and combine fully.
Step 2 of 4
Add the chopped onion, red capsicum, olives, zest, basil, parsley and combine.
Step 3 of 4
Fill the butterflied chicken with the prepared stuffing mix. Rub the outer of the chicken with 1 tbs of olive oil.
Step 4 of 4
Place the stuffed chicken in a roasting dish and cook for 25 minutes or until fully cooked. Remove from the heat and serve with a choice of sides.
