- 1tablespoons olive oil
- 500grams bone in chicken thighs
- 75milliliter balsamic vinegar
- 2 cloves garlic, peeled, minced
- 1tablespoons dijon mustard
- 1/2teaspoons rosemary, chopped
- 2teaspoons honey
- 8 large figs, stems removed, cut into quarters
- 2teaspoons unsalted butter, cold, diced into small cubes
Description
Pan roasted juicy chicken thighs are even more delicious with a sweet and sour fig and balsamic sauce made with honey and rosemary.
Method
Step 1 of 3
Heat a large heavy bottomed pan to medium heat adding in the olive oil for 1 minute. Pat the chicken dry using paper towel before seasoning the chicken on both sides with salt and pepper. Sear and brown the chicken on both sides for 6-8 minutes.
Step 2 of 3
Whisk the balsamic vinegar, garlic, dijon mustard, rosemary and honey together in a medium sized bowl. Mix in the figs before added everything to the pan with the chicken. Lower the heat to a simmer for 10 minutes reducing the balsamic, flipping the chicken in the pan every few minutes to coat the chicken.

Remove the chicken from the pan onto plates, add the butter to the sauce mixing until the butter has incorporated into the sauce. Spoon the sauce and figs onto the pieces of chicken. Serve warm.
