  • 4 chicken breasts, butterfly cut in half
  • 3tablespoons flour
  • 1 pinch pepper
  • 1tablespoons olive oil
  • 4tablespoons margarine
  • 2 cloves garlic, peeled and chopped
  • 2 medium shallots, sliced
  • 250grams mushrooms, washed and sliced
  • 1/3 cup marsala wine
  • 3/4 cup chicken stock

A comforting chicken dish with very smooth flavours.

Method

Step 1 of 4

In a mixing bowl, combine the chicken with the flour and pepper. Pan fry the oil and margarine together for 1 minute to melt the butter.

Step 2 of 4

Pan fry the chicken for 3 minutes on both sides. Remove from the pan and set to one side.

Step 3 of 4

Add the chopped garlic and shallots for 3 minutes on a medium heat. Add the mushrooms and fry for a further 5 minutes while stirring.

Step 4 of 4

Add the wine and chicken stock and allow to simmer on a medium heat for 10 minutes. Add the chicken to the pan and allow to cook for 5 minutes. Ensure the chicken is cooked before serving.
