  • 2tablespoons hot smoked paprika
  • 5tablespoons olive oil
  • 1 garlic bulb, cloves separated and lightly bruised
  • 2 sprigs thyme
  • 1/2 cup sweet sherry
  • 1 pinch salt
  • 1 pinch pepper

Method

Step 1 of 3

Toss together the chicken wings, paprika, oil and garlic cloves in a large bowl and season well. Tip into a shallow roasting tin and scatter with the thyme. Roast in a preheated oven, 200°C for 30 minutes.

Step 2 of 3

Turn the wings over and pour in the sherry. Return to the oven and cook for a further 30 minutes or until the chicken is cooked through.

Step 3 of 3

Transfer the chicken to a serving dish, squeeze the garlic from their skins, drizzle over the cooking juices and serve.
